I love refried beans with eggs - scrambled or fried, it's delicious. My daily breakfast is an egg/spinach omelette served over refried beans.

Oh, and the kimchee: I don't like it mixed in. I just have a few forkfuls of it to get it over with, and then I'm done with it.

Living in Texas, beans are typically as much a part of breakfast as eggs...typically either black beans or refried beans.

Personally, I think Kimchee omelets are delicious! I love how the eggs get saturated with the spices.

My roommates and I often heat up edamame for breakfast instead of beans. They're super easy on the stomach and with the steam-in-bag varieties you can cook them very quickly.

I've been drinking a small protien shake with my breakfast, just to ensure I am getting enough protien.
